Kinilaw
Kinilaw is Manila’s version of Bowls of a poke of Hawaii and Ceviche of Latin America. Kinilaw is made mixing fresh fish pieces, garlic, onions, tomatoes, ginger and chillies in citrus and coconut vinegar. In some parts, the fresh fish is doused in coconut cream. It tastes milky and tart articulating the delicious taste of fresh fish from the local rivers or lakes. It’s rich and fresh flavours make it one of the must-try foods in Manila.
Best place to try: The best way to have delicious Kinilaw is to get fresh seafood from Manila’s Dampa market (wet market) and ask at a ‘paluto’ restaurant to make you a plate of Kinilaw. You can get one at a reasonable rate.
Kare-kare
If you are a foodie who reads a lot about cuisines across the world, you must have come across Adobo, the unofficial representative of Philippine cuisine. Undoubtedly, it is one of the best dishes you must try in Manila but kare-kare deserves a little more spotlight we believe.
With vegetables like Chinese cabbage, daikon and eggplant mixed with pieces of stewed oxtail in peanut sauce, kare-kare will leave you with its delectable favour for long. It is best paired with steamed rice added with a glob of shrimp paste (bagoong) for a perfect meal.
